The Forever and Ever Child 2023 is a strikingly fast vintage. Fermentation raced ahead more quickly than any previous year—many of Anders and Anne’s white grapes finished fermenting well before the red harvest began. This sparkling rosé is a direct-press Syrah, pressed for 12 hours. Primary fermentation continued for only a few days in a fiberglass cuve before the wine was bottled, where fermentation slowed and finished naturally over winter, producing its bubbles.
Left on the lees for just over a year, this Pétillant Naturel gains a subtle, barrel-like bitterness and complexity more typical of longer élevage. The extended lees contact also preserves fresher, less overt fruit character and produces smaller, more delicate bubbles. The wine was dégorged in fall 2024 prior to release.
